Special Snack Suggestions

The teachers at The Albrook School invite you to share individual, nutritional, balanced snacks with your child's classmates on Special Snack Day.  This is an opportunity for you and your child to work together to provide a healthy, well-balanced snack for your child and his/her friends.  We are encouraging non-processed food choices.  We hope you will follow the guidelines presented by the registered dietitian, Jill Friedland.  We are looking to have carbohydrates served in combination with a protein or fat.  Please save cupcakes and processed dessert items for home parties.  We welcome cut fruit and vegetables, as well as home baked items.

 

The Albrook School has a NO NUT policy.  Please take a moment to read labels on any prepared foods to ensure there are no nut products used.  If it is homemade, please do not use peanut oil or any nuts (this includes sesame seeds).

 

In coordination with the teachers, we have compiled a list of foods that are appropriate for individual snacks and birthdays. Please keep in mind that we are a nut-free school.

Cucumber Crocodile

 

1 carrot

1 1/4 unpeeled cucumbers

Mixture of cheeses

Fresh pineapple, cut into chunks, or

1 small can of pineapple chunks

2 cherry tomatoes

Toothpicks

           

These adorable Crocodiles were brought into Ms. MacNeill class by Mrs. Spalucci.

 

Cut a long strip from the carrot using a vegetable peeler.  Cut this into a strip about 1/2 inch wide and cut along one side to form a serrated edge.  These are the crocodile's teeth.  Cut a wedge from the end of the cucumber to make its mouth.  Cut the 1/4 cucumber into two 1-inch-wide slices, cut these in half, and then shape into feet with a triangular shape cut out of them.  Attach these to the whole cucumber using toothpicks cut in half.  Chop the cheese and pineapple into cubes.  Thread a cheese and pineapple cubes onto each toothpick and spear the end into the cucumber.  Cut a toothpick in half and use the two halves to attach the cherry tomatoes to form the crocodile's eyes.

 

Irish Soda Bread

 

4 cups flour

1 cup sugar

1 tsp. salt

1 tsp. baking soda

2 Tbs. butter

2 cups raisins

1-1/4 cup buttermilk

Comments: Quick and easy to make. If you line the cookie sheet with parchment paper, the bottom of your Irish Soda Bread will not over cook as easily. Serve with soft butter or jam.

 

Combine flour, sugar, salt and soda; cut in butter.  Add raisins. Add buttermilk.  Mix together until moist.  You may need to add extra buttermilk, a little at a time. Knead together into a ball.  Put into iron skillet. Pat down slightly. Rub butter milk on top. With a knife, put a cross on top.  Bake in a 325-degree oven for one hour.

 

Note: The bread can be placed on an insulated cookie sheet and it comes out fine.

 

 

Oatmeal Raisin Cookies

 

2 cups flour

1-1/4 cups sugar

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

Comments:

Sift the above listed ingredients together in a large bowl. To the sifted mixture, add the following items:

3 cups rolled oats

1 cup raisins

1 cup  corn oil

2 eggs

1/2 cup milk

Stir until thoroughly blended.  Drop a teaspoon size amount of mixture onto a baking sheet lined in parchment paper. Bake in a 400-degree oven for 10 to 12 min. Yields 6 dozen cookies.

 

 

 

Ants on a Log , Albrook Style                    Prep time: 5 minutes

Ingredients:

  • 2 celery sticks

  • 6 tbsp. cream cheese

  • 2 tbsp. raisins

  • 2 tbsp. dried cranberries

 

 

Directions:

  1. Wash the celery and cut it into pieces (each piece should be about 5 inches long).

  2. Spread cream cheese in u-shaped part of celery, from one end to the other.

  3. Press raisins and cranberries gently into cream cheese.

  4. Enjoy your ants on a log, Albrook Style.

Serves: 2

Serving size: 1 celery stick

 

        Cheesy Roll-ups

 

        3 cheese sticks

        2 or 3 slices of your child's favorite deli meats

        6 or more crackers of choice

 

Most kids love string cheese or cheese sticks, so why not turn it  into a health meal?  Slice three cheese sticks in half, wrap one or two slices of  your child's favorite deli meats around each section and then wrap it up.  Add a few crackers to complete the meal.

 

Fruit Kebobs

 

Cut a variety of fruits into bite size peaces. Some of the favorites are cantaloupe, Honeydew Melon, grapes, strawberries and pineapples. Place the fruit onto a wooden stick, alternating your fruit as you go.  

 

A child who won't touch a plain old apple will often gobble down a fruit kebob.

Playful Dippers

 

1 cup plain Yogurt

1/2 packet dried onion soup mix

Vegetables cleaned and sliced

Leftover chicken cut into bite size strips

 

Combine 1 cup plain yogurt with 1/2 packet of dried onion soup mix: place into a plastic container and cover. Put dippers - baby carrots, celery sticks, green or red peppers and leftover chicken cut into strips into a plastic bag.  You now have a lunch the kids will have fun eating and will love.
